King Pig


For a long time the pig was considered a sacred animal. Many writers and poets have given voice to his changing fortunes, including the severe Cato (234 BC – 149 BC), who devoted a chapter of his “De Agriculture” to the salting, drying and spicing pork, illustrating methods still used today. He also praises for his goodness the porcus trojanus, a little roast pork stuffed with birds.
